Mackerel with chorizo, rocket & new potatoes

Serves: 1

Ingredients

1 mackerel (or trout) (c. 400g)
50g chorizo sausage
35g rocket
6 new potatoes
Salt & pepper
Olive oil
1 lemon

Method

1. Wash and boil your new potatoes for fifteen to twenty minutes in salted water.

2. Gut your mackerel then cut three deep diagonal cuts on each side of the fish and rub with a little olive oil and lightly season with salt and pepper. Place onto a grill tray and grill for 5 minutes on each side, less if the mackerel are small.

3. Meanwhile, chop the chorizo into 5mm cubes and quarter the potatoes. On a high, heat a wok or pan until smoking and add 2 teaspoons of olive or neutral oil. Swirl oil around and pour out any excess. Add potatoes and chorizo. Continue on a high heat for 2 - 2½ minutes.

4. Put the rocket into a heatproof bowl and season with a pinch of salt. Add the hot potatoes and chorizo and mix thoroughly (be careful of your hands).

5. Carefully place the mackerel onto a plate with the rocket, potatoes and chorizo on the side and serve with half a lemon and a white baguette.
