Leek & potato soup

Serves: 2-3

Ingredients

2 large leeks
4 medium potatoes
1 pt vegetable or chicken stock
salt & pepper

Method

1. Peel and dice potatoes into 1 inch cubes. Chop leeks into 10mm slices.

2. Prepare your stock and pour into a casserole dish.

3. Add the potatoes and leeks and bring to the boil. Season to taste and simmer for around 30 minutes stirring occasionally.
