Ingredients
1.25kg/2lb pork ribs
3 tbsp sweet chilli sauce
1 tbsp dark soy
1 tbsp plum jam
1 tbsp ground ginger
1 large garlic clove, crushed
good pinch of dried chilli flakes
Method
1. Heat oven to 180c/ fan 160c/ gas 4. Place the ribs on a large baking tray, season lightly, then cover tightly with a large piece of foil. Roast for 1 hour. Meanwhile, mix the rest of the ingredients together to make a thick sauce.
2. Uncover ribs and brush with half the sauce. Turn the oven up to 200c/ fan 180c/ gas 6. Return ribs to oven and roast, uncovered for 15-20 minutes more until golden, basting with the rest of the sauce halfway through. Pile onto a platter and serve.
